These protein-packed egg bites are a convenient and nutritious breakfast option, perfect for meal prepping. By blending cottage cheese with heirloom eggs and incorporating fiber-rich baby potatoes, spinach, and lean chicken breast, this recipe provides a satisfying and balanced start to your day with roughly 15 grams of protein per serving.
Ingredients
- 7 Heirloom Fresh blue eggs
- 1 cup Good Culture cottage cheese
- 3-4 small baby Dutch yellow potatoes
- 5 pieces of bacon
- 1 1/2 cups chopped chicken breast
- 1/2 cup chopped onion
- 1/2 cup Mexican four-cheese blend
- 1/2 bag baby spinach
- **Seasonings & Sauce:**
- 1 tbsp Salt
- 1 tbsp Black pepper
- 1 tbsp All-purpose seasoning
- 1 tbsp Onion powder

1 Dice the baby Dutch yellow potatoes and sauté them in a pan until tender.

2 While the potatoes cook, air fry 5 pieces of bacon until crispy, then crumble them into small pieces.

3 In a blender, combine the 7 eggs, 1 cup of cottage cheese, salt, pepper, all-purpose seasoning, and onion powder; blend until smooth.

4 Pour the egg mixture into a large mixing bowl and stir in the shredded cheese and baby spinach.
