- 1 bunch parsley

- 1 tsp pepper
- 1 tsp oregano
- 1 tsp garlic powder
- 1 tsp chicken bouillon
- 1 tbsp red wine vinegar

Prepare the Carrots:** In a bowl, whisk together the miso paste, honey, sesame oil, soy sauce, minced garlic, and 2 tbsp olive oil. Toss the carrots and sliced onions in the mixture until well coated.

Roast:** Spread the carrots on a baking sheet. Cook at **395°F** covered for **40 minutes**. Uncover and bake for an additional **10–15 minutes** until browned and tender.

Prepare the Chimichurri:** Finely chop the cilantro, parsley, red pepper, and garlic. In a bowl, combine these with the 1/4 cup olive oil, red wine vinegar, salt, pepper, oregano, garlic powder, and chicken bouillon. Mix well and set aside to let flavors meld.
